Main Ingredients Requirement
Pumpkin (kaddu), mustard oil, fenugreek seeds (methi), fennel powder, coriander powder, turmeric powder, red chilli powder, dry mango powder (amchur), sugar, salt and fresh coriander leaves for garnishing.
Step By Step Instruction
- Heat mustard oil in a pan until it reaches its smoking point. Allow it to cool slightly before adding the fenugreek seeds.
- Once the fenugreek seeds turn golden and aromatic, add the pumpkin cubes and sauté for 3–4 minutes.
- Stir in turmeric, coriander powder, fennel powder, red chilli powder, and salt. Mix gently so the pumpkin is evenly coated with the spices.
- Add water, cover, and cook over medium heat until the pumpkin becomes soft but still holds its shape.
- Mix in the sugar and dry mango powder. Stir carefully to avoid breaking the pumpkin pieces.
- Simmer uncovered for another 5–7 minutes until the gravy thickens and coats the pumpkin beautifully.
