How to Test Pure Himalayan Ghee: 4 Home Purity Checks

Ghee has been a staple in Indian kitchens for generations — the base of a good dal, the finishing touch on mountain dishes, and the reason Himachali Seera gets its deep, nostalgic flavor. But if you've bought ghee online recently, you've probably wondered: is this jar actually pure, or just another industrially processed tub with a traditional-sounding label?

Here's why that matters, and four tests you can run in your own kitchen to check.

Why authentic desi ghee matters

Most jars on a supermarket shelf claim "100% pure desi ghee." In practice, many commercial brands cut costs by blending in:

  • Cheap vegetable oils
  • Hydrogenated fats (vanaspati)
  • Milk from industrial dairies where cattle are raised on synthetic feed

If you want the real thing, it comes down to sourcing — cow's milk from cattle that graze freely, processed the traditional way, without shortcuts.

4 home tests for ghee purity

You don't need a lab. Here's what to look for.

Test 1: The palm melting test

Pure ghee melts at close to body temperature, so it should start liquefying almost as soon as it touches warm skin.

How to do it: Place a small dollop of room-temperature ghee on your palm.

What it means: If it melts quickly on contact, that's a good sign. If it stays solid, feels waxy, or needs rubbing to break down, it's likely been mixed with hydrogenated oils or heavier fats.

Test 2: The heat and color test

How to do it: Heat a spoonful of ghee in a pan over medium flame.

What it means: Pure ghee melts fast and turns a deep golden-brown, with a strong, nutty, caramelized smell. If it takes a while to melt, stays pale yellow, or turns white, that points to heavy processing or added color.

Test 3: The iodine test (checking for starch)

Some manufacturers add boiled potato, sweet potato, or industrial starch to bulk up the texture.

How to do it: Melt a teaspoon of ghee in a bowl and add 2-3 drops of iodine solution.

What it means: If the color stays a warm gold, it's clean. If it turns blue or purple, starch has been added.

Test 4: The cold separation test

This one exposes hidden vegetable or palm oil blended into the dairy fat.

How to do it: Pour melted ghee into a glass jar and refrigerate for about an hour.

What it means: Pure ghee sets into one even, granular layer. If you see distinct bands — like a clear oily layer sitting on a chalky base — different oils are present, and they're freezing at different rates.

Does pure ghee need to be refrigerated? No. Pure ghee is shelf-stable at room temperature for months due to its low moisture content. Refrigeration in Test 4 is only to observe how it solidifies, not for storage.
